“Basle” Soup: Beef Stock and Red Wine–based soup flavored with caramelized Onions, thickened with roasted flour and served over toasted Bread and Gruyere Cheese (Basel)

“Pizokels”: Spinach Quenelles (Dumplings) topped with “Beurre Noisettes” (browned butter); served with an herbed Coulis of Tomatoes (Grisons)

“Kalbsgeschnetzeltes”: Sliced Veal sautéed with Mushrooms in a Sauce made with White Wine and Cream, finished with a hint of Lemon; served with “Rosti” (Potato Pancake), (Zurich)
